Our house-ground patty is made of dry-aged New York strip, brisket and short rib, and seasoned with shallots, thyme, dry mustard and fish sauce. Drooling yet? Toppings include green tomato jam, shallots caramelized in port, beef-fat black pepper mayo and Stony Man cheese, made locally by Everona Dairy in Virginia.
